- 1 small onion, diced
- 2 cups shredded cheddar cheese
- 1 cup cooked quinoa or rice
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup tortilla chips, crushed (for topping)
- Fresh cilantro for garnish
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat and sauté the onions and bell peppers until softened, about 5 minutes.
In a large mixing bowl, combine the chicken, black beans, diced tomatoes, corn, cooked quinoa or rice, sautéed vegetables, cumin, chili powder, garlic powder, salt, and pepper. Stir until well combined.
Transfer the mixture into a greased 9x13 inch casserole dish. Spread it evenly.
Top with half of the shredded cheese, then sprinkle the crushed tortilla chips over it, and finish with the remaining cheese on top.
