Ingredients
- 12 oz penne pasta
- 1 zucchini, sliced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved

- 1 red onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
Preheat your oven to 400°F (200°C).
In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.
On a large baking sheet, toss the zucchini, bell pepper, cherry tomatoes, mushrooms, red onion, and garlic with olive oil, oregano, salt, and pepper. Roast in the preheated oven for 20-25 minutes until tender and slightly caramelized.
In a large mixing bowl, combine the cooked pasta, roasted vegetables, ricotta cheese, and half of the mozzarella cheese. Mix well until evenly combined.
Transfer the pasta mixture into a greased 9x13-inch baking dish. Top with the remaining mozzarella and Parmesan cheese.
Bake in the oven for an additional 15-20 minutes until the cheese is bubbly and golden brown.
Remove from the oven and let it cool for a few minutes. Garnish with fresh basil before serving.
