- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup corn kernels (fresh or frozen)
- 1 cup shredded cheddar cheese
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions
Preheat the oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
Add the shrimp and cook until just pink, then stir in the chipotle peppers, cumin, smoked paprika, salt, and pepper.
