Ingredients

- 1 can diced tomatoes with green chilies

- 1 tsp cumin

- 3 cups cooked rice
- 1/2 cup sour cream
Instructions
Preheat the oven to 350°F (175°C).
In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add onion and garlic, sauté until softened.
Stir in black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper. Cook for another 5 minutes.
In a large bowl, mix the beef mixture with cooked rice and sour cream until well combined.
Transfer the mixture to a greased 9x13 inch baking dish and top with cheddar cheese.
Bake for 25-30 minutes, or until cheese is bubbly and golden.
Let cool for a few minutes before serving.
