Ingredients
- 1 lb lean ground beef
- 1 can black beans, drained and rinsed
- 1 cup corn kernels, frozen or fresh
- 1 can diced tomatoes with green chilies
- 1 cup diced bell peppers
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups shredded low-fat cheese
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 6 whole wheat tortillas, torn into pieces
- Fresh cilantro for garnish
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, brown the ground beef over medium heat along with the onion and garlic until fully cooked.
Add in the black beans, corn, diced tomatoes, bell peppers, chili powder, cumin, salt, and pepper. Stir and let simmer for about 5 minutes.
In a 9x13 inch baking dish, layer half of the torn tortillas on the bottom.
Pour half of the beef mixture over the tortillas, followed by one cup of shredded cheese.
Repeat the layers, finishing with the remaining cheese on top.
Cover with foil and bake for 30 minutes. Uncover and bake for an additional 15 minutes or until the cheese is bubbly and golden.
Let cool for a few minutes before garnishing with fresh cilantro and serving.
