Ingredients
- 500g minced beef
- 1 can (400g) chickpeas, drained and rinsed
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground cinnamon
- 1 teaspoon paprika
- Salt and pepper to taste
- 400g chopped tomatoes (canned)
- 300ml beef stock
- 1 tablespoon honey
- Fresh coriander for garnish
Instructions
Preheat the oven to 180°C (350°F).
In a large ovenproof pan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
Add the minced garlic and cook for an additional minute.
Increase the heat and add the minced beef, cooking until browned all over.
Stir in the ground cumin, coriander, cinnamon, paprika, salt, and pepper, cooking for another 2 minutes until fragrant.
Add the chopped tomatoes, chickpeas, beef stock, and honey. Bring the mixture to a simmer.
Cover the pan and transfer to the preheated oven. Bake for 30-35 minutes until the flavours meld and the casserole thickens.
Remove from the oven and let it sit for a few minutes. Garnish with fresh coriander before serving.
