Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent.
Add the diced eggplant, red bell pepper, and zucchini. Cook for about 10 minutes until the vegetables soften.
