Ingredients
- 32 oz frozen tater tots
- 1 cup chopped kimchi
- 2 cups shredded cheese (cheddar and mozzarella blend)
- 1 lb ground beef or turkey
- 1/2 medium onion, diced
- 2 cloves garlic, minced
- 1 cup sour cream
- 1 cup shredded carrots (optional)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- Salt and pepper to taste
- Green onions for garnish
Instructions
Preheat the oven to 400°F (200°C).
In a large skillet over medium heat, add the ground meat, onion, and garlic. Cook until the meat is browned and the onions are translucent.
Stir in the chopped kimchi, soy sauce, sesame oil, carrots (if using), salt, and pepper. Cook for another 5 minutes.
In a large baking dish, spread the meat and kimchi mixture evenly on the bottom.
Layer the frozen tater tots on top of the meat mixture.
Spread the sour cream over the tater tots and sprinkle with half of the shredded cheese.
Bake in the preheated oven for 30 minutes, until the tater tots are crispy.
Remove from the oven and sprinkle the remaining cheese on top. Return to the oven for another 5-10 minutes, until the cheese is melted and bubbly.
Garnish with chopped green onions before serving.
