Ingredients
- 2 lbs potatoes, peeled and cubed
- 1 cup shredded cheddar cheese
- 1/2 cup green onions, chopped
- 1/2 cup sour cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 cup breadcrumbs
- Olive oil for frying
Instructions
Boil the cubed potatoes in salted water until tender, about 15 minutes.
Drain the potatoes, then mash them in a large bowl.
Mix in cheddar cheese, green onions, sour cream, garlic powder, onion powder, salt, and pepper until well combined.
Form the mixture into small balls or patties.
Roll each ball in breadcrumbs until fully coated.
Heat olive oil in a frying pan over medium heat.
Fry the potato bites until golden brown, about 4-5 minutes on each side.
Transfer the bites to a paper towel to drain excess oil.
Serve warm, garnished with additional green onions if desired.
