- 500g minced beef
- 2 medium sweet potatoes, peeled and diced

- 1 tbsp ginger, minced
- 1 can (400g) diced tomatoes
- 1 cup beef broth
- 2 tbsp berbere spice blend
- 1 tsp ground cumin
- 1 tsp ground coriander
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish
Instructions
Preheat your oven to 180°C (350°F).
In a large skillet, heat olive oil over medium heat. Add chopped onion, garlic, and ginger. Sauté until the onions are translucent.
