Ingredients
- 2 cups cooked shredded chicken
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) red enchilada sauce
- 1 can (15 oz) spicy tomato sauce
- 1 cup shredded cheddar cheese
- 2 cups tortilla chips, crushed
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 cup chopped green onions (for garnish)
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the cooked shredded chicken, black beans, corn, ground cumin, chili powder, garlic powder, and onion powder.
In a 9x13 inch casserole dish, layer half of the crushed tortilla chips on the bottom.
Spread half of the chicken mixture over the chips and then drizzle half of the enchilada sauce evenly.
Repeat the layering with the remaining tortilla chips, chicken mixture, and then pour the spicy tomato sauce over the top.
Sprinkle the shredded cheddar cheese on top.
Cover the dish with foil and bake for 20 minutes.
Remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbly.
Remove from oven and let it cool for a few minutes.
Garnish with chopped green onions before serving.
