Easy Alfredo Tater Tot Beef Casserole

Ingredients
- 1 bag (32 oz) frozen tater tots
- 1 pound ground beef
- 1 small onion, diced
- 2 cups Alfredo sauce (jarred or homemade)
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 2 cups shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish
In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is browned and onion is soft, about 8-10 minutes. Drain excess fat
Add the Alfredo sauce, frozen vegetables, garlic powder, Italian seasoning, salt, and pepper to the beef mixture. Stir well and simmer for 3-4 minutes
Remove from heat and stir in 1 cup of shredded mozzarella cheese until melted and combined
Spread the beef and Alfredo mixture evenly in the prepared baking dish
Arrange the frozen tater tots in a single layer on top of the beef mixture
Sprinkle the remaining 1 cup of mozzarella cheese and Parmesan cheese over the tater tots
Bake for 30-35 minutes, or until the tater tots are golden brown and crispy and the cheese is bubbly
Let cool for 5 minutes before serving
