- 12 lasagna noodles
- 2 cups cottage cheese
- 1 egg
- 3 cups marinara sauce

- Salt and pepper to taste

Instructions
Preheat your oven to 375°F (190°C).
In a large pot, cook the lasagna noodles according to package instructions until al dente, then drain and set aside.
In a bowl, combine cottage cheese, egg, Italian herbs, salt, and pepper; mix well.
Spread a thin layer of marinara sauce at the bottom of a greased casserole dish.
Layer 3 lasagna noodles over the sauce, then add half of the cottage cheese mixture, half of the spinach, and a third of the mozzarella cheese.
Repeat the layers with another 3 noodles, the remainder of the cottage cheese mixture, the rest of the spinach, and another third of the mozzarella.
Top with the final 3 noodles, the remaining marinara sauce, and sprinkle with the remaining mozzarella and Parmesan cheese.
Cover with foil and bake in preheated oven for 30 minutes.
Remove foil and bake for an additional 15 minutes or until the cheese is melted and bubbly.
Let it cool slightly before serving.
