Ingredients
- 4 ears of corn, husked
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 cup cooked quinoa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup shredded Cotija cheese
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 1/2 cup diced onion
- 1 jalapeño, seeded and diced
- 1 bell pepper, diced
Instructions
Preheat the oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat. Add onion, jalapeño, and bell pepper. Sauté for about 5 minutes until softened.
While the vegetables are cooking, grill the corn on a hot grill or grill pan until charred, about 2-3 minutes per side. Once cooled, slice the kernels off the cob.
In a large bowl, combine the charred corn, black beans, cherry tomatoes, cooked quinoa, cumin, chili powder, garlic powder, salt, and pepper.
Add the sautéed vegetables to the bowl and mix until well combined.
