- 1 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 cup unsalted butter, melted
- 1 cup crushed pineapple, drained
- 1 cup pineapple juice
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup chopped pecans (optional)
📝 Instructions
Preheat oven to 350F.
In a medium bowl, whisk together sugar, flour, salt, baking powder, cinnamon, nutmeg, and cloves.
Add melted butter, crushed pineapple, pineapple juice, eggs, and vanilla extract to the bowl. Stir until well combined.
Pour the mixture into a 9x13-inch baking dish.
If using pecans, sprinkle them evenly over the top of the casserole.
Bake for 40-45 minutes, or until the casserole is golden brown and set.
💡 Chef's Tips
Use fresh pineapple for the best flavor.
Don't overmix the batter, as it can result in a dense casserole.
If using pecans, toast them in a 350F oven for 5-7 minutes, or until fragrant and lightly browned, before sprinkling them on top of the casserole.
Let the casserole cool for 10-15 minutes before serving.
