Ingredients
- 1 bag of Doritos (Nacho Cheese flavor)
- 1 lb ground beef (or turkey)
- 1 can of black beans, drained and rinsed
- 1 can of corn, drained
- 1 can diced tomatoes (with green chilies if desired)
- 2 cups shredded cheddar cheese
- 1 packet taco seasoning
- 1 cup sour cream
- 1/2 cup green onions, chopped
- 1/2 cup jalapeños (optional for heat)
Instructions
Preheat your oven to 350°F (175°C).
In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
Add black beans, corn, diced tomatoes, and taco seasoning to the skillet. Mix well and cook for another 5 minutes.
In a large baking dish, layer half of the Doritos on the bottom.
Spread the beef mixture over the Doritos, then top with half of the cheddar cheese.
Add the remaining Doritos on top, followed by the rest of the beef mixture and finish with the remaining cheese.
Bake in the oven for about 20 minutes or until the cheese is melted and bubbly.
Remove from the oven and let cool for a few minutes. Top with sour cream, green onions, and jalapeños if desired before serving.
